Multi Grain Waffle with Maple and Cameo Apple Compote

I’ve been drooling over this picture of waffles every since my son posted it on his Facebook page a couple of weeks ago. After pestering him a couple dozen times I finally convinced him to share his recipe. I’ll probably never cook the recipe myself. I just want to make sure I have all the ingredients in the house, so when he’s home for Thanksgiving, so he can cook it for me.

Multi Grain Cider Waffle with Maple and Cameo Apple Compote

Multigrain Cider Waffle: Yields: 4 servings

1 cup unbleached all purpose flour
1 cup whole wheat flour
1/2 cup quick oats
1 tablespoon flax seed optional
1/4 cup brown sugar
2 teaspoons baking powder
2 tablespoons melted butter
1 each egg beaten
1/2 teaspoon salt
1 cup milk
1/2 cup apple cider

Combine all ingredients and beat until combined if needed add more milk if batter is too thick.

Maple and Cameo Apple Compote:

1 large cameo apple diced (medium pieces)
1 cup genuine maple syrup
1/4 teaspoon ground cinnamon
A pinch of nutmeg (fresh ground if possible)
2 tablespoons butter
Dash of salt

In a small saucepan melt butter over medium heat.
Add diced cameo apple and saute for 5 minutes.
Add cinnamon, nutmeg, salt and maple syrup.
Cook for 2 minutes.
Ladle hot compote over cooked multigrain waffle and enjoy.

* you can substitute any crisp apple like Granny Smith or Jonagold.
